Coconut-Lime Chicken Stew with Rice
1 tbsp vegetable oil3 organic chicken breasts
3 cups chopped onions
1 1/2 cups red and yellow diced peppers
3 tbsp fresh finely chopped ginger
6 cloves of chopped garlic
1/4 tsp chili flakes, or to taste
4 cups sweet potato, finely diced
1 tsp sea salt, or to taste
6 cups of filtered water
1 can coconut milk
2/3 cup of jasmine or basmati rice
Spinach Cake
1 ½ pounds spinach, thoroughly washed, leave stems on if they are not tough
3 tablespoons grapeseed oil
1 cup pine nuts
2 cloves garlic, minced
2 eggs, whisked
½ cup currants
1 teaspoon celtic sea salt
- Wilt spinach in a large covered saucepan, over low heat (do not add water) 5 minutes, until tender
