Avocado Egg Salad

Ingredients

1 large ripe avocado
3 or 4 hard-boiled eggs - peeled and chopped
1 celery stalk - finely chopped
1 tbs finely chopped chives
fresh parsley or dill (optional)
sea salt and pepper to taste


Directions
Peel 3 or 4 cool hard boiled eggs and chop or mash them in a bowl. Pit, peel and chop a large avocado and add it to the eggs. Finely chop 1 stalk of celery and add it to the egg and avocado mixture. Add chives, sea salt, pepper and fresh parsley or dill (optional) and mix all ingredients together. Enjoy!
