Beet Salad

Ingredients
4 large cooked beets
1 can chick peas, rinsed
1 red pepper
1/2 a cucumber, diced
1/2 onion
1 tbs olive oil
Juice from 1 lemon
Sea salt & pepper to taste
Option: fresh cilantro or parsley

Directions

Chop the cooked beets, red pepper and onion into bite size pieces then combine them in a large salad bowl. Next add the chick peas, cucumber, olive oil, lemon juice, sea salt, pepper and cilantro or parsley to the bowl. Toss all ingredients and refrigerate.
