Coconut Tapioca Porridge

Ingredients: 


  • 1/4 cup small-pearl tapioca
  • 1 (13.5-ounce) can light coconut milk
  • ¼ cup real maple syrup (or for low sugar use stevia to taste)
  • 1 1/2 teaspoons lemon juice
  • 1/2 cup toasted unsweetened coconut flakes

Method: 

Place tapioca and 2 cups water into a medium heavy-bottomed saucepan and let soak 30 minutes. Add coconut milk and maple syrup or stevia; bring to a boil over medium heat, stirring constantly. Reduce heat to a simmer and cook about 15 minutes, or until tapioca is translucent, stirring frequently to prevent scorching. Stir in lemon juice and garnish with coconut flakes.
