Italian Quinoa & Chicken Tomato Cups

 
Ingredients


  • ½ a  yellow onion
  • 6 tomatoes, scooped out and made into cups
  • 1 large Portobello mushroom
  • 2 chicken breasts, cooked
  • 2 cups quinoa, cooked with 4 cups water, plus 2 Tbs of extra virgin olive oil, 1 Tbs white wine vinegar and 1 Tbs Italian seasoning (a blend of dried basil, marjoram, oregano, rosemary, sage, thyme and parsley)

Instructions


  1. Wash the tomatoes well. Cut of the tops off and scoop out the insides of the tomatoes. Save all the insides of the tomatoes in a bowl.
  2. Chop up the onion and mushroom, and toss into a skillet with olive oil. Add in the insides of the tomatoes that you scooped out to make the cups.
  3. Once the vegetables are cooked down, add in the chicken breasts (cut into chunks) and cook until heated through.
  4. Once the chicken is warm toss in the cooked quinoa and serve in the tomato cups. Drizzle with a little olive oil mixed with white wine vinegar and Italian seasoning.
