
Italian Quinoa & Chicken Tomato Cups

- ½ a yellow onion
- 6 tomatoes, scooped out and made into cups
- 1 large Portobello mushroom
- 2 chicken breasts, cooked
- 2 cups quinoa, cooked with 4 cups water, plus 2 Tbs of extra virgin olive oil, 1 Tbs white wine vinegar and 1 Tbs Italian seasoning (a blend of dried basil, marjoram, oregano, rosemary, sage, thyme and parsley)
Instructions
- Wash the tomatoes well. Cut of the tops off and scoop out the insides of the tomatoes. Save all the insides of the tomatoes in a bowl.
- Chop up the onion and mushroom, and toss into a skillet with olive oil. Add in the insides of the tomatoes that you scooped out to make the cups.
- Once the vegetables are cooked down, add in the chicken breasts (cut into chunks) and cook until heated through.
- Once the chicken is warm toss in the cooked quinoa and serve in the tomato cups. Drizzle with a little olive oil mixed with white wine vinegar and Italian seasoning.
