
Lunch Ideas
Salads:
1. Quinoa, millet or amaranth salad mixed with your favorite veggies and or beans.
2. Green salad topped with your choice of: baked chicken or turkey slices, wild salmon, chick peas, white beans, walnuts, sunflower and pumpkin seeds, hard boiled eggs, olives, avocado etc.
3. Bean salads – use chickpeas, white beans, lentils, black beans, kidney beans, black eyes peas, etc. with your favorite chopped veggies or greens. *For all salads make a simple dressing using olive oil and lemon juice or apple cider vinegar plus a little sea salt and pepper to taste.

Wraps:
Lettuce Wraps – Use Romaine or Swiss chard leaves and fill with hummus, chicken, avocado, cucumber, peppers, onion, black beans, tomato, egg salad etc.
Nori Wraps (Nori is the sea weed paper, used in sushi) – Great filled with stir fried veggies like bell pepper, zucchini, mushrooms, onion and tomato with a bit of tamari sauce or fill with chicken ,beef, salmon and you favorite fresh vegetables.
Sprouted Grain or Brown Rice Tortilla Wraps –Fill your tortilla with black beans and salsa, eggs and avocado, hummus and chicken with salad, tuna or wild salmon with olive oil and lettuce, etc.
Chickpea flat bread wraps (see recipe on website called Chickpea Flatbread “Socca”) This quick bread can be used as a wrap for all your favorite fillings.
Avocados:
1. Avocado halves stuffed with sunflower seeds and sprinkled with sea salt.
2. Avocado Egg Salad. Mash 1 or 2 hard boiled eggs with an avocado, plus olive oil, sea salt and pepper. You can wrap the egg salad in lettuce, spoon it onto cucumber slices, or try a sprouted brown rice tortilla.
3. Avocado Chicken Salad. Add baked chicken slices and slices of avocado and salad to a sprouted brown rice tortilla.
Sweet Potatoes:
*Time saver - Bake a 1 or 2 sweet potatoes in your toaster over the night before (45 min at 350 F) so they are ready in the morning.
1. Sweet potato arugula salad with olive oil and cider vinegar dressing plus some chopped cucumber and chickpeas on top.
2. Fried sweet potatoes in coconut oil with spinach and black bean salad.
3. Sweet potato cubes with steamed diced cauliflower, chickpeas and spinach.
4. Sweet potato, lentil and kale soup
