Pear, Mint and Napa Cabbage Slaw   
 

Ingredients:
2 Sprigs Mint, chopped finely
8 oz. Napa Cabbage, shredded
1 Barlett Pear, thinly sliced
1 large Carrot, shredded
2 Tbs Mayonnaise
1 Tbs Olive Oil
1 Tbs Rice Vinegar
Sea Salt & Pepper to taste


Directions:

Wash and pat dry, cabbage, pear and mint leaves.  
Thinly shred the napa cabbage and carrot.
Thinly slice the barlett pear.
Roughly chop mint leaves.
In a large bowl, add the mayonnaise, rice vinegar and olive oil.
Add the napa cabbage, bartlett pear, carrot and mint.
Toss to coat.
