
Thai Buddha Bowl
(Serves 4)
Ingredients
2 grilled chicken breasts
2 limes quartered
1 carrot
1 cucumber
1-2 cups corn
1-2 fresh mango
2 cups snap peas
1 cup peanuts or cashews
2 green onions chopped
1/2 cup chopped cilantro
1 cup cabbage slaw
Ingredients for Peanut Sauce
¼ cup peanut butter or almond butter
2 Tbs lime juice
1Tbs honey
1 tsp Siracha

Ingredients for Peanut Sauce
¼ cup peanut butter or almond butter
2 Tbs lime juice
1Tbs honey
1 tsp Siracha
Instructions
- Slice chicken and divide evenly into four bowls.
- Julienne-cut the carrot and cucumber and place in bowl.
- Add 1/4 cup corn, slaw and peanuts/cashews to each, 1/2 cup snap peas, a few green onions and mango slices, and a slice of lime in each bowl.
- Combine all the peanut or almond butter, lime juice, honey and Siracha into a small bowl and blend well with a wire whisk. Top each of the bowls with peanut sauce and serve.
