Chickpea Salad

Prep Time: 10 mins   Servings: 3-4

This is my go to in a pinch. Good for a few lunches.

Ingredients

  • 1 can of organic chickpeas

  • 1 cucumber chopped smaill

  • 1 red pepper chopped small

  • 1/2 onion chopped small

  • Optional: chopped chives, parsley, basil, avocado

Dressing

  • 3 tablespoons olive oil

  • Juice of 1 lemon

  • Sea salt and pepper to taste
